TOMATO, CUCUMBER AND BASIL SALAD

Pick up some fresh produce at the Farmer’s Market, and you’ll understand what I mean! A ripe, juicy summer tomato is just as delightful as an apple. Toss it into a salad with crisp cucumbers, onions, and a light herb dressing, and you’ve got a refreshing summer side dish—what we call Tomato, Cucumber, and Basil Salad.

INGREDIENTS

  • 1 large hothouse cucumber
  • 6 medium Campari tomatoes, quartered
  • ½ small sweet onion, thinly sliced
  • ¼ cup fresh basil, chopped
  • 3 tablespoons red wine vinegar
  • 1 tablespoon olive oil
  • 1 medium garlic clove, minced
  • Freshly ground black pepper, to taste

INSTRUCTIONS

  • Peel the cucumber, slice it in half lengthwise, and use a spoon to remove the seeds. Slice the cucumber and place it in a bowl. Add the tomatoes, onion, and basil.
  • In a separate small bowl, whisk together the vinegar, olive oil, garlic, and black pepper. Pour the dressing over the salad and toss to coat.
  • Serve immediately or cover and refrigerate until ready to serve.
