If you have leftover steamed rice from last night’s stir fry, you can easily turn it into Spanish rice. It tastes just as delicious as traditional Spanish rice!

INGREDIENTS
- 3 cups cooked rice (leftover white or brown)
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/2 onion, diced
- 4 garlic cloves, minced
- 1/2 cup tomato sauce (or more, if desired)
- 1/4 cup water
- 1/4 teaspoon ground coriander
- Salt and pepper to taste
DIRECTIONS
- In a skillet, heat olive oil and butter over medium heat.
- Add the diced onion and sauté until softened.
- Stir in the minced garlic and cook for an additional minute.
- Add the rice and continue to sauté for a couple of minutes.
- Pour in the tomato sauce, water, and coriander, stirring to combine.
- Bring the mixture to a simmer, then reduce the heat, cover, and cook for 15-20 minutes, stirring occasionally until the sauce is absorbed and the rice becomes less sticky.
- Season with salt and pepper to taste, and enjoy!
