HOW TO MAKE EEL SAUCE FOR SUSHI

To kick off my Sushi series, I’m sharing just how easy it is to whip up this versatile sauce. Popular in many Thai and Japanese restaurants, this sweet and savory condiment pairs perfectly with sushi, fish, and a variety of other dishes.

INGREDIENTS

  • 1/2 cup soy sauce
  • 1/2 cup sugar
  • 1/2 cup mirin

INSTRUCTIONS

  • Combine the soy sauce, sugar, and mirin in a small saucepan.
  • Heat over medium heat, stirring occasionally, until the liquid reduces by about 1/4. This should take approximately 10 minutes.
  • The sauce is ready when it reaches the consistency of honey.
