INGREDIENTS
- 1 lb Chicken, Beef, or Vegetables
- 1 large white onion, minced
- 2 tsp curry powder
- 1 tsp garam masala
- 1 cup chicken/beef stock (or 1 cube)
- ½ can coconut milk
- 1 tsp cornstarch
- 1 tsp ground cumin
- Fresh coriander (to taste)
- Optional: peas and other vegetables of your choice
- 1 tsp extra virgin olive oil
INSTRUCTIONS
- Heat the olive oil in a pan. Once hot, add the minced onion and spices (curry powder, garam masala, cumin).
- Cook for a couple of minutes until the spices become aromatic, then add your choice of meat, chicken, or vegetables.
- Stir to coat everything evenly, then cook until the meat or vegetables begin to simmer.
- Gradually add the stock, scraping up any flavorful bits stuck to the pan.
- Bring the curry to a simmer, then add the coconut milk. Stir until the texture and color start to change.
- If the curry is too runny, mix the cornstarch with a little water to form a paste, then add it gradually until the curry thickens to your desired consistency.
- Add the peas (or other vegetables) and simmer until the meat or vegetables are cooked through and tender.
- Finish with a handful of fresh coriander, stir to combine, and your curry is ready!
