CRUMBL COPYCAT S’MORES COOKIES

What’s your favorite Crumbl cookie flavor? One of mine is definitely S’mores! You’re going to love this copycat recipe for Crumbl S’mores Cookies—it lets you whip up a batch anytime you’re craving them!

INGREDIENTS

Graham Cracker Cookies:

  • 8 tbsp unsalted butter (4 oz)
  • ½ cup light brown sugar, packed (3.5 oz)
  • ⅓ cup granulated sugar (2.3 oz)
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • 1 ⅓ cups all-purpose flour (6.65 oz)
  • 4 full sheets graham crackers (about 66g)
  • ¾ tsp baking soda
  • ⅛ tsp salt
  • ¾ cup milk chocolate chips
  • 8 large marshmallows (halved lengthwise)

Optional Toppings:

  • Chocolate Ganache Drizzle:
    • 2 tbsp milk chocolate chips
    • 1 tbsp unsalted butter
  • Buttered Graham Crackers:
    • 1 graham cracker
    • 2 tsp unsalted butter

INSTRUCTIONS

Step 1. Brown Butter:

  • Slowly melt the butter in a saucepan over medium-low heat.
  • Increase heat slightly and stir frequently as the butter bubbles and pops.
  • Once the bubbling slows, watch for brown bits forming (toasted milk solids). Swirl and remove from heat promptly to avoid burning.

Step 2. Make the Cookie Dough:

  • Pour the browned butter into a large bowl and let cool for 10 minutes.
  • Preheat oven to 350°F and line a baking sheet with parchment paper.
  • Crush graham crackers into fine crumbs using a zip-top bag and rolling pin.
  • Stir the brown and granulated sugars into the cooled butter until combined.
  • Mix in the egg and vanilla extract.
  • Add flour, graham cracker crumbs, baking soda, and salt. Stir until fully combined.
  • Fold in milk chocolate chips (don’t worry about perfection here).

Step 3. Shape & Bake Cookies:

  • Scoop dough into 8 equal portions (about ⅓ cup each) and roll into balls.
  • Place on a baking sheet and bake for 10 minutes until set but not golden.
  • Immediately press two marshmallow halves onto each cookie.

Step 4. Toast Marshmallows:

  • Turn the broiler to high. Broil cookies for 1-2 minutes, rotating the pan as needed until marshmallows are golden.
  • Cool cookies for 10-15 minutes before adding toppings.

Step 5. Add Optional Toppings:

  • For the chocolate drizzle: Melt butter in the microwave, stir in chocolate chips until smooth, and drizzle over cookies.
  • For buttered graham crackers: Mix melted butter with crushed graham crackers, then sprinkle on top.
