TWO BANANAS BREAD RECIPE

It always seems like when I’m in the mood to make banana bread, I only have two bananas left. It’s as if there’s a law of physics governing the number of ripe bananas I have on hand at any given time! Most of the banana bread recipes I come across call for three bananas, but after some trial and error, I’ve finally found one that only needs two!

Ingredients

  • 3/4 cup sugar
  • 1/2 cup butter (softened)
  • 2 large eggs
  • 2 ripe bananas (mashed)
  • 1/2 teaspoon vanilla
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon

Instructions

  • Preheat the oven to 350°F.
  • Prepare an 8×4-inch loaf pan.
  • In a bowl, combine sugar, butter, and eggs. Beat at medium speed, scraping the bowl frequently, until the mixture is creamy.
  • Add the mashed bananas and vanilla. Beat at low speed until well mixed.
  • Stir in the remaining ingredients.
  • Pour the batter into the prepared loaf pan.
  • Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes, then remove it and place it on a cooling rack.
  • Allow it to cool completely before slicing.
