It always seems like when I’m in the mood to make banana bread, I only have two bananas left. It’s as if there’s a law of physics governing the number of ripe bananas I have on hand at any given time! Most of the banana bread recipes I come across call for three bananas, but after some trial and error, I’ve finally found one that only needs two!
Ingredients
- 3/4 cup sugar
- 1/2 cup butter (softened)
- 2 large eggs
- 2 ripe bananas (mashed)
- 1/2 teaspoon vanilla
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350°F.
- Prepare an 8×4-inch loaf pan.
- In a bowl, combine sugar, butter, and eggs. Beat at medium speed, scraping the bowl frequently, until the mixture is creamy.
- Add the mashed bananas and vanilla. Beat at low speed until well mixed.
- Stir in the remaining ingredients.
- Pour the batter into the prepared loaf pan.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then remove it and place it on a cooling rack.
- Allow it to cool completely before slicing.
