This Turkey Taco Bowl recipe is a quick and easy dinner that’s perfect for meal prep. You can also use leftover Thanksgiving turkey instead of ground turkey for a delicious twist!
INGREDIENTS
✔ 1 cup cooked rice
✔ 1 ½ limes, juiced (divided)
✔ 1 handful cilantro, chopped
✔ 1 tbsp olive oil
✔ 2 cloves garlic, minced
✔ 1 chipotle pepper in adobo, chopped
✔ 1 tbsp adobo sauce (from the chipotle can)
✔ 1 lb ground turkey or chopped leftover turkey
✔ 2 tsp chili powder
✔ 1 tsp cumin
✔ ½ tsp dried oregano
✔ Salt and pepper to taste
✔ Toppings of your choice: black beans, corn, cheese, sour cream (or Greek yogurt), salsa, avocado, fresh tomatoes, extra limes

INSTRUCTIONS
Prepare the Rice – Cook rice according to package instructions. Once done, mix in the juice of half a lime and chopped cilantro. Set aside.
Cook the Turkey – While the rice is cooking, heat olive oil in a pan over medium-high heat. Add garlic, chipotle pepper, and adobo sauce. Sauté for 1 minute.
Season & Simmer – Add ground turkey (or leftover turkey) and season with chili powder, cumin, oregano, salt, and pepper. Cook until the turkey is fully cooked (breaking it up as it cooks), or until the leftover turkey is warmed through. Squeeze the remaining lime juice over the meat and remove from heat.
Assemble – Layer a bowl with rice, turkey, and your favorite toppings. Serve and enjoy!

- Store rice, turkey, black beans, corn, or other reheatable toppings in a microwave-safe container.
Keep dairy (cheese, sour cream), avocado, salsa, fresh tomatoes, and extra limes in a separate container to add after reheating.
