INGREDIENTS
- 1 pound ground turkey
- 1/4 cup shredded carrots
- 6 oz coarsely chopped mushrooms
- 2 green onions, chopped
- 1 clove garlic, minced
- 3 tbsp hoisin sauce
- 2 tbsp low-sodium soy sauce
- 1 tbsp rice wine vinegar
- 2 tsp sriracha
- 1 tsp sesame oil
- 12 butter lettuce leaves (or use Boston or iceberg lettuce)

DIRECTIONS
- Heat a medium-sized skillet over medium-high heat and add the ground turkey. Cook, breaking it apart, until it is almost fully cooked.
- Stir in the shredded carrots, mushrooms, and garlic, and continue cooking for 1-2 minutes until the turkey is fully cooked and the vegetables are tender. Add the chopped green onions.
- Add the hoisin sauce, soy sauce, rice wine vinegar, sesame oil, and sriracha. Stir everything together and let it simmer for 1-2 minutes, until the sauce thickens and coats the meat.
- Serve the mixture in butter lettuce leaves (or your preferred lettuce) and enjoy!
