This traditional Bánh Mì features pickled vegetables and tender chicken breast, making it as colorful as it is appetizing. Let’s dive into this simple, authentic recipe!
INGREDIENTS
- 1 boneless chicken breast half
- ½ cup rice vinegar
- ¼ cup thinly sliced white onion
- ¼ cup white radish, cut into 1/16-inch-thick strips
- ¼ cup carrot, cut into 1/16-inch-thick strips
- 1 small jalapeño pepper, seeded and cut into 1/16-inch-thick strips
- ¼ cup water
- ¼ cup thinly sliced cucumber
- Garlic salt, to taste
- French baguette
- ¼ cup white sugar
- Ground black pepper, to taste
- 4 tablespoons mayonnaise
- 1 lime wedge
- 1 tablespoon fresh cilantro leaves
INSTRUCTIONS
- In a saucepan, combine sugar, water, and rice vinegar. Heat over medium and bring to a boil, stirring for about 1 minute until the sugar dissolves. Remove from heat and allow to cool.
- In a bowl, combine radish, carrot, and onion. Pour the cooled vinegar mixture over the vegetables and let them marinate for at least 30 minutes. Once marinated, drain the excess vinegar mixture.
- Preheat your oven’s broiler and position the rack about 6 inches from the heat source. Lightly grease a slotted broiler pan.
- Season the chicken breast with garlic salt, pepper, and sprinkle with additional seasoning as desired. Place the chicken on the slotted broiler pan and broil for about 6 minutes per side, or until the chicken is browned and cooked through. Remove from the broiler and slice into small pieces.
- Slice the baguette in half lengthwise and hollow out the center, leaving a space for the filling. Lightly toast the baguette halves under the broiler for 2-3 minutes.
Assembling the Classic Bánh Mì: Spread mayonnaise on each half of the toasted baguette. On the bottom half, layer the pickled vegetables, broiled chicken, jalapeño pepper, cilantro leaves, and cucumber slices. Squeeze a lime wedge over the filling, then place the top half of the baguette to close the sandwich. Enjoy!
