ZUCCHINI ORANGE BREAD

INGREDIENTS

For the Bread:

  • 4 eggs
  • 1 1/2 cups sugar
  • 3/4 cup oil
  • 2/3 cup orange juice
  • 2 cups shredded unpeeled zucchini
  • 3 1/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons grated orange rind
  • 2 1/2 teaspoons cinnamon
  • 1/2 teaspoon ground clove
  • 1/2 cup chopped nuts (optional)

For the Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons orange juice

DIRECTIONS

  • Preheat the oven to 350°F. Grease and flour the bottoms only of two 8×4 or 9×5 loaf pans.
  • In a large bowl, beat the eggs until thick and light in color. Gradually add the sugar, beating until combined.
  • Stir in the oil, orange juice, and shredded zucchini.
  • Add the remaining bread ingredients and mix until well combined.
  • Pour the batter into the prepared pans.
  • Bake for 45-55 minutes, or until a cake tester inserted into the center comes out clean.
  • Let the loaves cool for 10 minutes in the pans, then remove them and cool slightly on a wire rack.
  • In a small bowl, mix the glaze ingredients together. Spread the glaze over the warm loaves.
  • Allow the loaves to cool completely on the wire rack. Wrap tightly and store in the refrigerator.
