ZUCCHINI BITES

Zucchini Bites are deliciously savory morsels packed with fresh zucchini, Parmesan cheese, and a flavorful blend of seasonings. Crispy and golden brown on the outside with a tender interior, these bites are quick and easy to prepare in just under 30 minutes. They can be baked in the oven or cooked in the air fryer for a versatile and hassle-free snack.

INGREDIENTS

  • 2 cups shredded zucchini
  • 1 cup Panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • 1 tablespoon vegetable oil
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon Italian seasoning
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon ground black pepper (adjust to taste)

INSTRUCTIONS

  • Prepare the zucchini
    • Shred the zucchini using a box grater or food processor.
  • Mix the ingredients
    • In a large bowl, combine the shredded zucchini, breadcrumbs, Parmesan cheese, egg, vegetable oil, garlic powder, paprika, Italian seasoning, salt, and pepper. Mix thoroughly until all ingredients are evenly incorporated.
  • Form the zucchini bites
    • Scoop about 2 spoonfuls of the mixture and shape into 1.5-inch balls. Arrange them on a plate.
  • Cook the bites
    • Air Fryer Method: Place the zucchini balls in a single layer in the air fryer basket. Lightly spray with cooking oil to prevent sticking. Air fry at 350°F for 13-15 minutes until golden brown.
    • Oven Method: Preheat the oven to 375°F. Arrange the zucchini balls on a baking sheet and bake for 15 minutes until golden brown.
