This Microwave Caramel recipe is quick and simple, requiring just six ingredients to create the most deliciously buttery caramels. Perfect for the holiday season, these homemade caramels are a sweet treat that makes for a delightful gift or a festive snack to share with loved ones.
Ingredients
- 1 cup Butter
- 1 cup Brown Sugar
- 1 cup White Sugar
- 1 cup Light Corn Syrup
- 1 (14 oz) can Sweetened Condensed Milk
- 1 tsp Vanilla
Instructions
- Grease an 8×11 or 8×8 inch baking pan.
- In a large glass mixing bowl, combine butter, brown sugar, white sugar, and corn syrup. Microwave for 5 minutes. Carefully remove the bowl from the microwave using hot pads and stir.
- Add the sweetened condensed milk to the bowl and stir to combine. Return the bowl to the microwave and cook for another 10-15 minutes, stopping every 3 minutes to stir.
- In the final 1-2 minutes, stir the caramel and check the temperature every 30 seconds.
- To test the consistency, drop a few drops of caramel into a bowl of ice water. If the caramel forms a soft ball, it’s ready. If using a thermometer, it should reach 235º F.
- Once done, stir in the vanilla extract. Carefully pour the caramel into the greased pan and cover with plastic wrap. Chill the caramel in the fridge overnight or place it in the freezer for 1 hour until it’s cool enough to handle.
- Remove the caramel from the pan and cut it into bite-sized pieces. Wrap each piece in parchment paper for easy sharing!
