INGREDIENTS
- 1 box (13 oz) rigatoni pasta (elbow, penne, or rotini work too)
- 2 cups broccoli florets
- 1 tbsp olive oil
- 2 boneless, skinless chicken breasts
- 1 yellow onion, minced
- 2 garlic cloves, minced
- 1 tbsp all-purpose flour
- 3 cups unsweetened almond milk (or 1% dairy milk)
- ½ cup grated sharp cheddar cheese
- ½ tsp salt
- ⅛ tsp pepper

INSTRUCTIONS
- Cook Pasta and Broccoli:
- Cook pasta according to package instructions.
- Add broccoli to the boiling pasta water when the pasta is nearly done. Drain and set aside.
