INGREDIENTS
Stir Fry Sauce
- ½ cup low-sodium soy sauce or coconut aminos
- ¼ cup freshly squeezed orange juice (about 1 medium orange)
- 1 tablespoon rice vinegar
- ½ teaspoon freshly grated ginger
- 2 cloves garlic, minced
- 1 tablespoon honey or brown sugar
- 1 tablespoon cornstarch or tapioca starch
Stir Fry
- 1 lb ground beef (I used 90% lean)
- Salt and pepper, to taste
- 2 tablespoons sesame oil or olive oil
- 1 small yellow onion, sliced
- 1 red bell pepper, sliced
- 3 cups chopped broccoli florets
- 2 large carrots, peeled and sliced
- 2 cups snap peas
- Garnish: Green onions, sesame seeds, or red pepper flakes
- To serve: White rice, brown rice, coconut rice, ramen noodles, lettuce cups, or cauliflower rice
INSTRUCTIONS
- In a small bowl, whisk together all the sauce ingredients until well combined.
- In a large pan or wok, heat 1 tablespoon of sesame oil over medium heat. Add the ground beef, breaking it apart as it cooks, until no longer pink (about 4-5 minutes). Transfer the cooked beef to a bowl and drain any excess fat.
- Add the remaining tablespoon of sesame oil to the pan over medium heat. Toss in all the vegetables and stir-fry until they are nearly tender (about 5-6 minutes).
- Pour the prepared sauce over the vegetables and bring to a gentle boil over medium-high heat. Cook until the sauce bubbles and thickens, about 2-3 minutes.
- Return the ground beef to the pan and stir to coat it in the sauce and vegetables. Top with green onions and sesame seeds before serving. Enjoy over white rice, coconut rice, brown rice, noodles, or in lettuce wraps.
