DATE NUT BREAD

INGREDIENTS

  • 1 cup chopped dates
  • 1 teaspoon baking soda
  • 1 cup boiling water
  • 4 tablespoons melted butter
  • 1 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 1/2 cups all-purpose flour
  • 1/2 cup coarsely chopped walnuts or pecans

INSTRUCTIONS

  • Preheat and Prep: Preheat the oven to 325°F. Generously butter or spray a 4 x 8-inch loaf pan with nonstick spray.
  • Prepare the Dates: Place the chopped dates in a bowl or 2-cup measuring cup. Sprinkle with baking soda, then pour the boiling water over the dates. Let the mixture cool, keeping the water.
  • Mix Ingredients: In a mixing bowl, beat the melted butter and sugar on medium-high speed until combined. Add the egg and mix on medium until smooth. Strain the water from the dates into the mixing bowl, then mix in.
  • Combine Flour and Add-ins: Add the flour and mix until almost combined. Add the dates and nuts, and mix on low speed just until incorporated—avoid over-mixing.
  • Bake: Pour the batter into the prepared loaf pan and bake for 55–60 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool: Run a knife around the pan edges, and let the bread cool in the pan for 10 minutes. Gently shake to release, then invert onto a wire rack to cool completely.

Storage Tips

  • Room Temperature: Store in an airtight container for up to 3 days.
  • Refrigerate: Store in the refrigerator for up to 5 days.
  • Freeze: Wrap the cooled loaf tightly in plastic wrap, then in foil. Freeze for up to 3 months; thaw in the fridge overnight, and bring to room temperature before serving.

Notes

  • Dates: An 8-ounce package of chopped dates is enough, or use 1 cup for a lighter date flavor.
  • Mini Loaves: To make mini loaves, divide the batter between mini loaf pans and adjust the baking time. Check for doneness with a toothpick based on your pan size.
