This Carrot Cake in a Mug is a quick and cozy microwave dessert, ready in just 3 minutes! It’s sweet, scrumptious, and incredibly easy to make—perfect for the season.
INGREDIENTS
- 1½ tablespoons butter
- 2 tablespoons brown sugar
- 1/4 teaspoon vanilla extract
- 3 tablespoons milk
- 1/4 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon ground cinnamon
- 2 tablespoons (28.3g) finely shredded carrot
INSTRUCTIONS
- In a small bowl or directly in the mug, combine the melted butter, brown sugar, vanilla extract, milk, flour, baking powder, and cinnamon. Stir or whisk until the mixture is smooth. Fold in the shredded carrots.
- Microwave the mug cake for 1 to 1½ minutes. For best results, start checking at 1 minute; the cake should appear set but be careful not to overcook. (In my microwave, 1 minute 15 seconds works perfectly.)
- Allow the cake to cool before topping with whipped cream, cream cheese glaze, or a dusting of powdered sugar.
