These lettuce wraps are absolutely amazing! Crunchy, fresh, and loaded with tofu, brown rice, crispy onions, and topped with a drizzle of peanut sauce and spicy mayo. So delicious!
INGREDIENTS
- For the Lettuce Wraps:
- Olive oil
- 14-ounce block extra-firm tofu (lightly pressed to remove excess water)
- 2 cups cooked brown rice (or quinoa, or other grains) – I use precooked 8.5-ounce packages for ease
- Butter lettuce or leaf lettuce for wrapping
- Spicy mayo (see notes)
- Chopped peanuts or crispy onions for topping
- For the SOS Peanut Sauce:
- 1/2 cup teriyaki sauce
- Juice of 1 orange
- 1/4 cup peanut butter
- A squirt of Sriracha (or other chili sauce, optional for heat)
- (Optional: Use homemade peanut sauce for an extra touch)

INSTRUCTIONS
- Cook the tofu: Heat a bit of olive oil in a nonstick skillet over medium-high heat. Add the tofu and crumble it in the pan. Cook until slightly browned.
- Prepare the sauce: While the tofu is cooking, whisk together all the peanut sauce ingredients in a bowl.
- Combine rice and sauce: Add the cooked rice and most of the peanut sauce to the pan with the tofu. Sauté for about 5 minutes, allowing some browning and light caramelization for flavor. Season with salt to taste.
- Fill and serve: Spoon the tofu and rice mixture into crisp lettuce leaves. Top with a crunchy element (like chopped peanuts or crispy onions) and creamy spicy mayo. Drizzle with the remaining peanut sauce for extra flavor. Now, enjoy your new favorite meal of the week!
NOTES
- Spicy Mayo: For a quick spicy mayo, mix 1/4 cup mayo with 1 tablespoon sriracha. Adjust the heat level based on your preference.
