Pearl Couscous
1 ½ cups Pearl Couscous
2 teaspoons Extra virgin olive oil
Water
½ cup Cherry or grape tomatoes
½ cup Colored peppers
½ cup Chickpeas
¼ cup Red onion
¼ cup Kalamata olives
¼ cup Feta cheese
¼ cup Parsley
½ cup Artichoke
¼ cup Sliced almonds (toast them in olive oil until slightly golden)
¼ cup Dried cranberries
For the Dressing
¼ cup Extra virgin olive oil
1 teaspoon Oregano
3 tablespoons Freshly squeezed lemon juice
2 Garlic cloves, minced
1 teaspoon Mustard
Salt and black pepper, to taste
INSTRUCTIONS
- Prepare the Pearl Couscous: Heat 2 teaspoons of olive oil in a saucepan over medium heat. Add the pearl couscous and toast it for about 2-3 minutes. Add water and bring it to a boil. Simmer for 8-10 minutes, or until the couscous is “al dente” (refer to the package instructions). Drain the couscous and set aside to cool.
