This classic meatloaf recipe has been in my family for generations, passed down from my grandparents and their parents. Over the years, I’ve made a few tweaks, but I always return to this original version because it’s simply the best! It’s perfect for when you’re on a budget—quick to prepare and chances are you already have all the ingredients on hand.
INGREDIENTS
- 2 eggs
- 3/4 cup milk
- 1/2 cup fine dry breadcrumbs
- 1/4 cup finely chopped onion
- 2 tablespoons snipped parsley
- 1 teaspoon salt
- 1/2 teaspoon ground sage
- 1 1/2 pounds ground beef
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 1 teaspoon dry mustard
INSTRUCTIONS
- In a large bowl, beat the eggs and milk together, then stir in the breadcrumbs.
- Add the chopped onion, parsley, salt, sage, and 1/8 teaspoon of pepper. Mix everything together, then incorporate the ground beef, using your hands for the best results (this helps the mixture blend faster and more evenly).
- Shape the mixture into a loaf if not using a bread pan, but using a loaf pan or mini loaf pans is recommended for even cooking.
- Bake the meatloaf in a 350°F (175°C) oven for 50 minutes. Once done, spoon off any excess fat.
- In a small bowl, combine the ketchup, brown sugar, and dry mustard. Stir until smooth and then spread this mixture evenly over the top of the meatloaf.
- Return the meatloaf to the oven for an additional 10-15 minutes to let the topping set.
