Thai Sweet Chili Pork Tenderloin is a perfect balance of spicy, sweet, and savory flavors, with a melt-in-your-mouth tenderness.
INGREDIENTS
- 1.25 pounds pork tenderloin
- 2 tablespoons olive oil (1 tablespoon for the rub, 1 tablespoon for the pan)
- 1 teaspoon paprika
- Salt and pepper, to taste
- 2 cloves garlic, peeled and minced
- 1-inch knob of fresh ginger, peeled and minced (or 1 teaspoon pre-made stir-in paste)
- 2 tablespoons tamari (or soy sauce)
- ½ cup Thai sweet chili sauce (for a diabetic-friendly option, swap with ½ cup sugar-free orange preserves, 1 teaspoon water, and a pinch of dried chili flakes, then melt over low heat)
- 1 tablespoon chopped spring onions, optional for garnish
INSTRUCTIONS
- Preheat the oven to 400°F (204°C). Gather all your ingredients.
- Rub the pork tenderloin with olive oil, paprika, salt, pepper, and minced garlic on all sides. Add a little extra olive oil to your pan. If you have a skillet or oven-safe pan, it’s ideal as it reduces the number of dishes to clean later.
- Heat the pan over medium-high heat and sear the pork tenderloin on all sides, about 2 minutes per side, for a total of 6 minutes.
- Transfer the seared pork tenderloin to the preheated oven and cook for 10-15 more minutes, or until the internal temperature reaches 145°F. Turn the pork halfway through cooking.
- While the pork is cooking, mix together the minced ginger, tamari, and Thai sweet chili sauce (or the diabetic-friendly glaze alternative).
- In the last 5 minutes of cooking, brush the Thai chili sauce glaze over the pork tenderloin.
- Once done, remove the pork from the oven and let it rest for 5 minutes. Slice and garnish with chopped green onions.
