PINEAPPLE COCONUT SMOOTHIE

In just 5 minutes, you can whip up the creamiest Pineapple Coconut Smoothie that tastes just like a piña colada! Made with frozen pineapple, coconut milk, yogurt, and banana, this healthy smoothie is perfect for a quick breakfast on-the-go or a refreshing treat by the pool on a warm summer day.

INGREDIENTS 

  • 2 cups frozen pineapple (thawed for 5 minutes)
  • 1 medium banana (cut into 1-inch chunks)
  • ½ cup full-fat coconut milk
  • ¼ cup plain yogurt
  • 1 Tbsp sweetener (optional)

INSTRUCTIONS

  • Add all ingredients to a blender (such as a Vitamix or Nutribullet). Place the softer ingredients closer to the blade and the frozen ingredients farther from it.
  • Blend for 1-2 minutes or until smooth and creamy.
  • Serve with diced pineapple, shredded coconut, and a straw.

Yield: This recipe makes two 8-ounce smoothies or one large 16-ounce smoothie.

NOTES

  • Milk: You can substitute regular milk, oat milk, cashew milk, almond milk, or soy milk if you prefer not to use coconut milk.
  • Yogurt: Feel free to use Greek yogurt, goat yogurt, or any plant-based or nut-based yogurt as a substitute.
  • Prep-Ahead: To prepare in advance, measure out ingredients and store them in a freezer-safe bag or airtight container. They can be kept for up to 3-4 months in the freezer. Let them thaw for 20-30 minutes before blending.
