INGREDIENTS

  • 12 ounces capellini pasta, cooked
  • 1/3 cup extra virgin olive oil
  • 2 teaspoons minced garlic
  • 2 pounds plum tomatoes, seeded and diced
  • 1/4 teaspoon black pepper
  • 1 ounce fresh basil leaves, minced
  • 3 ounces Parmesan cheese

INSTRUCTIONS

  • Cook the capellini pasta according to the package directions.
  • In a skillet, heat the olive oil over medium heat. Add the minced garlic and cook until it turns white and fragrant.
  • Stir in the diced tomatoes and black pepper. Cook for 2–3 minutes, stirring gently to heat through without breaking down the tomatoes. Remove from heat.
  • Place the hot, cooked pasta in a large serving bowl. Toss it with the tomato mixture, minced basil, and half of the Parmesan cheese until well combined.
  • Serve immediately, garnished with the remaining Parmesan cheese on the side.
