INGREDIENTS
- 2 kg small, waxy potatoes
- 2 tablespoons olive oil
- ½ teaspoon salt
- Pepper, to taste
- 3 sprigs fresh thyme (or ½ teaspoon dried thyme)
INSTRUCTIONS
- Prepare the Potatoes:
- Rinse and scrub the potatoes well. Place them in a large pot, cover with water, and bring to a boil.
- Simmer over medium heat, covered, for 15-20 minutes, until tender. Cooking time will vary based on potato size.
- Prepare the Oven and Marinade:
- Preheat the oven to 180°C (fan-forced) or 200°C (conventional).
- Line two baking sheets with parchment paper.
- In a small bowl, mix the olive oil, salt, pepper, and thyme leaves.
- Smash the Potatoes:
- Drain the cooked potatoes and let them steam briefly to remove excess moisture.
- Arrange the potatoes on the prepared baking sheets. Using a potato masher or the back of a spatula, gently press each potato until it splits and flattens to about 1–1.5 cm thickness.
- Bake the Potatoes:
- Brush each potato generously with the thyme-infused olive oil mixture.
- Bake for 20 minutes, or until golden and crispy. If using a conventional oven, rotate the trays halfway through for even cooking.
