INGREDIENTS
- 1 lb. ButcherBox Ground Beef
- 1/2 cup onion, finely chopped
- ½ tablespoon garlic, minced (2 cloves)
- 1 cup red bell pepper, diced
- 2 tablespoons taco seasoning
- 3 cups medium shells pasta (10 oz)
- 1/2 tablespoon tomato paste
- 2 cups beef broth
- 2 cups water
- 1 cup shredded cheddar cheese
INSTRUCTIONS
- Heat a large pan over medium-high heat and spray with olive oil.
- Brown the ground beef, onion, garlic, and red bell pepper in the pan until fully cooked, about 10 minutes.
- Add the uncooked pasta, taco seasoning, tomato paste, beef broth, and water to the pan. Stir everything together, cover, and bring to a boil.
- Once boiling, remove the cover and reduce the heat to a simmer. Stir occasionally for 12-14 minutes, or until the pasta is tender and the liquid has reduced by about 3/4.
- Remove the pan from the heat and stir in the shredded cheddar cheese until melted and well-combined.
- Taste and adjust seasoning with salt and pepper as desired.
