TACO PASTA

This Cheesy Taco Pasta will quickly become your go-to weeknight meal. With just 10 simple ingredients, many of which you likely already have in your pantry, and cooked in a single pan, it’s both easy and delicious! Ground beef and pasta simmer together in a creamy, cheesy sauce, creating the ultimate comforting one-pan dinner.

INGREDIENTS

  • 1 lb. ButcherBox Ground Beef
  • 1/2 cup onion, finely chopped
  • ½ tablespoon garlic, minced (2 cloves)
  • 1 cup red bell pepper, diced
  • 2 tablespoons taco seasoning
  • 3 cups medium shells pasta (10 oz)
  • 1/2 tablespoon tomato paste
  • 2 cups beef broth
  • 2 cups water
  • 1 cup shredded cheddar cheese

INSTRUCTIONS

  • Heat a large pan over medium-high heat and spray with olive oil.
  • Brown the ground beef, onion, garlic, and red bell pepper in the pan until fully cooked, about 10 minutes.
  • Add the uncooked pasta, taco seasoning, tomato paste, beef broth, and water to the pan. Stir everything together, cover, and bring to a boil.
  • Once boiling, remove the cover and reduce the heat to a simmer. Stir occasionally for 12-14 minutes, or until the pasta is tender and the liquid has reduced by about 3/4.
  • Remove the pan from the heat and stir in the shredded cheddar cheese until melted and well-combined.
  • Taste and adjust seasoning with salt and pepper as desired.
