TABBOULEH OR TABOULI SALAD

Tabbouleh, also known as Tabouli, is a classic Middle Eastern salad made with finely chopped parsley, diced tomatoes, and bulgur wheat. It’s seasoned with fresh lime juice and olive oil for a bright, refreshing flavor.

Ingredients

  • ½ cup bulgur wheat (#2 grind)
  • 2 cups water
  • 4 cups parsley leaves, finely chopped
  • ½ cup mint leaves, finely chopped
  • ¾ cup red onion, or 10 green onions (white parts and some greens), finely chopped
  • 2 cups tomatoes, finely diced
  • ⅓ cup fresh lime juice
  • ⅔ cup extra virgin olive oil
  • Sea salt, to taste

Instructions

  • Soak the bulgur wheat in water for 20-30 minutes.
  • Drain the bulgur using a fine colander, pressing to remove any excess water.
  • In a large salad bowl, combine the bulgur, parsley, mint, onion, and tomatoes.
  • Drizzle with olive oil and lime juice, and season with sea salt to taste.
  • Refrigerate for at least 30 minutes to allow the flavors to meld before serving.
