Tabbouleh, also known as Tabouli, is a classic Middle Eastern salad made with finely chopped parsley, diced tomatoes, and bulgur wheat. It’s seasoned with fresh lime juice and olive oil for a bright, refreshing flavor.
Ingredients
- ½ cup bulgur wheat (#2 grind)
- 2 cups water
- 4 cups parsley leaves, finely chopped
- ½ cup mint leaves, finely chopped
- ¾ cup red onion, or 10 green onions (white parts and some greens), finely chopped
- 2 cups tomatoes, finely diced
- ⅓ cup fresh lime juice
- ⅔ cup extra virgin olive oil
- Sea salt, to taste

Instructions
- Soak the bulgur wheat in water for 20-30 minutes.
- Drain the bulgur using a fine colander, pressing to remove any excess water.
- In a large salad bowl, combine the bulgur, parsley, mint, onion, and tomatoes.
- Drizzle with olive oil and lime juice, and season with sea salt to taste.
- Refrigerate for at least 30 minutes to allow the flavors to meld before serving.
