You’re going to love this rich and creamy Vanilla Raspberry Chia Pudding! Simply blend the ingredients before bed, let it set overnight, and wake up to a deliciously healthy breakfast that feels like a treat!
INGREDIENTS
- 1 cup fresh or frozen raspberries
- 1 cup milk (cow’s milk, almond, coconut, or your favorite)
- 1 tbsp honey, rice malt syrup, or pure maple syrup
- 1 tsp pure vanilla extract
- Juice of 1 lemon
- 2 tbsp Greek yogurt (optional)
- 3 tbsp chia seeds

INSTRUCTIONS
- In a blender or food processor, blend all ingredients except the chia seeds until smooth. Taste and adjust sweetness if needed.
- Pour the mixture into two jars and add 1.5 tablespoons of chia seeds to each.
- Secure the lids and shake well to evenly distribute the chia seeds.
- Let sit for 1 hour, shake again, then refrigerate overnight.
