Whip up a batch of classic old-fashioned rock cakes, just like Grandma used to make. With only a handful of simple ingredients, these treats are the perfect addition to any British teatime.

INGREDIENTS

  • 200g self-raising flour (or oatmeal)
  • 100g margarine
  • 100g sugar
  • 100g sultanas or currants
  • 1/2 teaspoon mixed spice
  • 1 egg
  • Splash of milk

INSTRUCTIONS

  • Preheat the oven to 200°C (400°F) or Gas Mark 6.
  • In a bowl, combine the flour and margarine. Rub the margarine into the flour until the mixture resembles fine breadcrumbs.
  • Stir in the sugar, sultanas (or currants), and mixed spice.
  • Beat the egg with a splash of milk, then mix it into the dry ingredients to form a stiff dough.
  • Spoon small heaps of dough onto a greased baking tray. (Optionally, sprinkle sugar on top of each rock cake).
  • Bake in the preheated oven for 15-20 minutes. (Baking time may vary slightly depending on the size of the rock cakes).
