PECAN PIE FAT BOMBS

These 5-ingredient sweet keto pecan pie fat bombs are the ultimate low-carb snack or treat! Quick and easy to make, these no-bake delights will transport you straight to pecan pie heaven. Best of all, each serving has less than 1 net carb!

INGREDIENTS

  • 1/2 cup + 2 tbsp butter, divided
  • 1/2 cup cream cheese
  • 1/2 tsp cinnamon
  • 1/2 cup Swerve Brown, divided
  • 3/4 cup pecans

INSTRUCTIONS

  • In a mixing bowl, beat together the cream cheese and 1/2 cup of butter until smooth. Add the cinnamon and 1/4 cup of Swerve Brown, mixing until fully incorporated. Spread the mixture evenly into the bottom of a baking dish and freeze while preparing the topping.
  • In a small pan over low heat, melt the remaining 2 tbsp of butter. Stir in the remaining 1/4 cup of Swerve Brown until caramelized. Drizzle the caramel mixture over the chilled cream cheese layer, then return to the freezer for 5 minutes.
  • Finely chop the pecans and spread them on a plate. Use a spoon to scoop and form small 1-inch balls from the chilled mixture. Roll each ball in the crushed pecans until fully coated.
  • Store the fat bombs in the refrigerator until ready to enjoy.
