One-Pot Creamy Sun-Dried Tomato and Spinach Pasta with Chicken is a quick and delicious dinner the whole family will love! Packed with flavor and surprisingly creamy—without a drop of heavy cream—this healthy dish is sure to become a favorite!
INGREDIENTS
✔ 2 teaspoons olive oil
✔ 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
✔ 2 cloves garlic, minced
✔ 1 teaspoon Italian seasoning
✔ 1/4 teaspoon red pepper flakes (optional)
✔ Kosher salt and freshly ground black pepper, to taste
✔ 1/3 cup sun-dried tomatoes, drained and blotted to remove excess oil
✔ 8 ounces whole wheat or gluten-free pasta (such as bowtie pasta)
✔ 3 cups low-sodium chicken broth
✔ 2 teaspoons arrowroot powder, dissolved in 2 teaspoons water (see notes for substitutions)
✔ 2 cups baby spinach, packed
✔ 2 tablespoons fresh basil, finely chopped
✔ 1/2 cup shredded part-skim mozzarella cheese
✔ 1/4 cup shredded Parmesan cheese
✔ 1/3 cup plain non-fat Greek yogurt

INSTRUCTIONS
- Cook the Chicken: In a large skillet over medium-high heat, heat the olive oil. Add the chicken, season with salt, pepper, Italian seasoning, and red pepper flakes. Cook until the chicken is no longer pink.
- Sauté Aromatics: Add the minced garlic and sun-dried tomatoes, cooking for another 1–2 minutes until fragrant.
- Cook the Pasta: Pour in the chicken broth and stir in the pasta. Bring to a simmer, then reduce the heat to medium-low. Cover and cook for 10–15 minutes, or until the pasta is tender.
- Thicken the Sauce: Stir in the arrowroot slurry and cook for 1–2 minutes until the sauce starts to thicken.
- Add the Final Ingredients: Remove the skillet from heat, then stir in the mozzarella, Parmesan, and spinach until the spinach begins to wilt.
- Make it Creamy: Fold in the Greek yogurt until fully combined. Taste and adjust seasoning if needed, then serve immediately.
NOTES
If you don’t have arrowroot powder, you can substitute cornstarch in the same amount.
Flour can also be used if gluten-free isn’t a concern. Instead of the arrowroot slurry, use 1 tablespoon flour, sprinkling it in during Step 2 and stirring well before adding the broth. Continue with the recipe as directed.
