INGREDIENTS

  • 2 large zucchini, spiralized
  • 1 cup packed spinach
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 5 cloves garlic, minced
  • Sea salt and black pepper, to taste
  • ¼ cup sun-dried tomatoes
  • 2 tbsp capers
  • 2 tbsp chopped Italian flat-leaf parsley
  • 10 kalamata olives, halved
  • ¼ cup shredded Parmesan cheese
  • ¼ cup crumbled feta cheese

INSTRUCTIONS

  • Heat a large sauté pan over medium heat. Add the zucchini, spinach, olive oil, butter, garlic, salt, and pepper. Cook until the zucchini is tender and the spinach has wilted. Drain any excess liquid.
  • Stir in the sun-dried tomatoes, capers, parsley, and kalamata olives. Sauté for another 2-3 minutes.
  • Remove from heat and toss with Parmesan and feta cheese before serving.
