MEDITERRANEAN TURKEY SPAGHETTI SQUASH

Mediterranean Turkey Spaghetti Squash is a flavorful, low-carb, and keto-friendly meal that’s sure to satisfy your taste buds. This dish combines lean ground turkey, fresh tomatoes, vibrant veggies, and creamy melted feta cheese for a truly delicious experience!

INGREDIENTS (SERVES 4)

  • 2 spaghetti squashes
  • 1 lb. 93% lean ground turkey
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 14 oz. canned diced Italian tomatoes
  • 2 cups mushrooms, sliced
  • 6 oz. spinach
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 1 cup reduced-fat feta cheese (or your preferred cheese)

INSTRUCTIONS

  • Preheat oven to 400°F. Cut the spaghetti squashes in half lengthwise and scoop out the seeds. Season with salt and pepper. Bake, cut side down, on a baking sheet for about 1 hour, or until soft. For microwave, place the squash halves in a microwave-safe dish, cover, and microwave for 8-9 minutes. Scrape out the flesh and save the squash shells.
  • Heat a skillet over medium-high heat. Add the ground turkey and diced onion, cooking until the turkey is browned and no longer pink, breaking it up as you go. Add minced garlic and cook for another minute until fragrant.
  • Add the diced tomatoes (with juice), sliced mushrooms, spinach, thyme, rosemary, and dried basil to the skillet. Let the mixture simmer on low, stirring occasionally, until the mushrooms are tender, about 6-8 minutes. Taste and season with salt and pepper, but be cautious with the salt since feta cheese will be added later.
  • Scrape the spaghetti squash flesh into the skillet and mix it with the turkey and tomato mixture.
  • Option 1: Spray a casserole dish with cooking spray and transfer the squash and turkey mixture into the dish.
    Option 2: Return the mixture to the spaghetti squash halves to create “boats.”
  • Top with feta cheese (or your choice of cheese). Bake for 10 minutes, or broil for 5 minutes, until the cheese is melted and golden.
