LOW CARB PECAN PIE

A quick and easy fix for your holiday cravings!

INGREDIENTS (US UNITS)

Crust:

  • 1 ½ cups almond flour
  • 4 tablespoons butter, melted

Filling:

  • 3 eggs, beaten
  • 1 cup Splenda granular
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter, melted
  • 1 cup sugar-free maple syrup
  • 1 ½ cups pecans (chopped or halves)

DIRECTIONS

  • Combine almond flour and melted butter, then press the mixture into an 8″ or 9″ pie plate. Refrigerate to set.
  • In a bowl, beat the eggs with Splenda.
  • Stir in vanilla, melted butter, and syrup, then fold in the pecans.
  • Pour the filling into the prepared crust.
  • Bake at 350°F for approximately 45 minutes, or until set. Enjoy!
