This simple Crockpot Keto Tuscan Garlic Chicken recipe is a flavorful, low-carb dinner the whole family will enjoy. Plus, it takes just 15 minutes to prep!
INGREDIENTS
- 1 tbsp olive oil
- 6 cloves garlic, minced
- 1 cup heavy cream
- 1/3 cup chicken broth
- 3/4 cup grated Parmesan cheese
- 4 large chicken breasts (6 oz each)
- 1 tbsp Italian seasoning
- Sea salt, to taste
- Black pepper, to taste
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups spinach, chopped and packed

INSTRUCTIONS
- Heat the olive oil in a medium saucepan over medium heat. Add the minced garlic and sauté for about one minute.
- Pour in the heavy cream and chicken broth, bringing the mixture to a gentle simmer. Reduce the heat to low and let it simmer for 8-10 minutes until slightly thickened. The sauce should be thin enough to coat the back of a spoon.
- Arrange the chicken breasts at the bottom of your crockpot and season with Italian seasoning, sea salt, and black pepper.
- Sprinkle the chopped sun-dried tomatoes over the chicken.
- Once the sauce is ready, lower the heat and whisk in the Parmesan cheese, adding 1/4 cup at a time until smooth.
- Pour the sauce evenly over the chicken in the crockpot.
- Cook on High for 3-4 hours or Low for 6-8 hours.
- Remove the chicken from the crockpot and set it aside.
- Turn the crockpot to High, add the chopped spinach, and stir until wilted.
- Return the chicken to the crockpot, spooning the sauce, spinach, and sun-dried tomatoes over the top before serving.
