Got leftover ham in your fridge? Whip up a healthy and delicious crustless ham and broccoli quiche! Recipe by Dara Michalski of Cookin’ Canuck.
INGREDIENTS
- 1 cup small broccoli florets
- 4 large eggs
- 4 large egg whites
- 1/4 cup water
- 1 cup low-fat cottage cheese
- 1/2 tsp dried thyme
- 1/4 tsp salt
- 1/4 tsp ground pepper
- 3 oz chopped ham
- 2 Tbsp crumbled cheese (such as feta)

DIRECTIONS
- Preheat the oven to 375ºF and lightly coat a 9-inch pie dish with cooking spray.
- Bring a large pot of water to a boil. Add the broccoli florets and cook for about 1 minute until just tender. Drain and rinse with cold water.
- In a large bowl, whisk together the eggs, egg whites, and water. Stir in the cottage cheese, thyme, salt, and pepper, whisking well to break up the cottage cheese.
- Pour the mixture into the prepared pie dish. Evenly distribute the broccoli and ham, then sprinkle the crumbled cheese on top.
- Bake for 30 to 35 minutes, or until the eggs are set and a knife inserted in the center comes out clean.
- Let the quiche rest for 5 minutes before slicing into 6 wedges. Serve and enjoy!
