HIGH PROTEIN STUFFED SHELLS

This classic dish, known for its creamy, cheesy indulgence, gets a makeover with protein-packed ingredients, transforming it from a simple pleasure to a satisfying and nutritious meal. We’ll explore how to elevate this family favorite, focusing on maximizing protein without sacrificing the delicious flavors you love. 

INGREDIENTS

  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 1 jar marinara sauce
  • 1 tbsp Italian seasoning
  • Salt and pepper, to taste
  • 20 jumbo pasta shells
  • 15 oz ricotta cheese
  • 1/4 cup parmesan cheese (plus extra for topping)
  • 1/2 cup mozzarella cheese
  • 1 egg
  • 2 cups spinach, chopped
  • 1 tbsp Italian seasoning
  • 1/4 tsp red pepper flakes
  • 3/4 tsp sea salt
  • Pepper, to taste

INSTRUCTIONS

Step 1: Preheat the oven to 400°F. Cook the jumbo shells according to the package instructions, then drain and set aside.

Step 2: Heat olive oil in a pan over medium heat. Add the ground turkey and cook until browned. Stir in Italian seasoning, salt, pepper, and marinara sauce. Reduce the heat and let it simmer for 10 minutes. Transfer the meat sauce to a baking dish, spreading it evenly across the bottom.

Step 3: In a mixing bowl, combine ricotta, parmesan, mozzarella, egg, chopped spinach, Italian seasoning, red pepper flakes, sea salt, and pepper. Stir until well mixed.

Step 4: Spoon about 1 tablespoon of the ricotta mixture into each cooked shell. Arrange the stuffed shells on top of the meat sauce in the baking dish. Sprinkle additional cheese over the top, cover, and bake for 20 minutes.
