These healthy peanut butter banana recipes require only 10 ingredients and are packed with chocolate chips. They’re also gluten-free and loaded with protein!
INGREDIENTS
- 3 large ripe bananas
- 1/2 cup natural peanut butter
- 4 tablespoons honey
- 2 eggs
- 2 teaspoons vanilla extract
- 1 1/4 cups oat flour*
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup dark chocolate chips
INSTRUCTIONS
- Preheat your oven to 425°F. Line a 12-cup muffin tin with paper liners and lightly spray them with oil. Set aside.
- In a large bowl, mash the bananas and mix with peanut butter, honey, eggs, and vanilla extract until well combined.
- Stir in the oat flour, baking powder, and salt until just incorporated. Gently fold in the chocolate chips, being careful not to overmix.
- Scoop the batter into the muffin cups, filling each just under the top.
- Bake for 5 minutes at 425°F. Without opening the oven door, reduce the temperature to 350°F and continue baking for another 15 minutes.
- Let the muffins cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
*Note: You can use gluten-free oat flour if needed.
