FRIED CABBAGE WITH KIELBASA – LOW CARB, GLUTEN FREE

INGREDIENTS

  • 6 tbsp butter (or olive oil, ghee, or coconut oil), divided
  • 1 cup diced onion (about 4 oz)
  • 4 cloves garlic, minced
  • 2 tbsp red wine vinegar
  • 14 oz kielbasa, thinly sliced on the bias
  • 1 large head of green cabbage, cored and sliced
  • 1 tsp paprika
  • Sea salt and pepper, to taste
  • 1/4 cup fresh Italian flat-leaf parsley, chopped
  • 1 tsp crushed red pepper flakes (optional)

INSTRUCTIONS

  • In a large skillet, melt 3 tbsp of butter over medium heat.
  • Add the diced onion and minced garlic. Sauté until the onion becomes translucent and the garlic is fragrant.
  • Pour in the red wine vinegar, stirring to combine with the onions and garlic.
  • Add the sliced kielbasa to the skillet and cook until it’s lightly browned.
  • Stir in the remaining butter, followed by the sliced cabbage, paprika, salt, and pepper. Toss everything together to coat the cabbage with the butter and seasonings.
  • Continue sautéing until the cabbage wilts and begins to brown slightly.
  • Remove from heat and garnish with fresh parsley and optional crushed red pepper flakes before serving.
