EASY CREPES 

I’ve had my fair share of mishaps, but I can confidently say this is the best crepe recipe out there! I’m here to guide you through the entire process—think of this as your ultimate, foolproof guide to making perfect crepes with ease.

INGREDIENTS

  • 5 large eggs, room temperature
  • 3 cups whole milk, warmed
  • 2 ½ cups all-purpose flour
  • 4 tablespoons unsalted butter, melted (plus extra for cooking)
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon sea salt

  • In a blender, combine all ingredients, starting with the wet ingredients followed by the dry. Blend on low speed for about 1 minute until smooth and bubbly. Let the batter rest for at least 20 minutes.
  • Heat a large pan over medium heat. I used a 12-inch crepe pan.
  • Use a measuring cup to portion out the batter based on your pan size:
    • 10 to 12-inch pan: Use 1/2 cup of batter per crepe.
    • 8-inch pan: Use 1/3 or 1/4 cup of batter per crepe.
  • Lightly brush the pan with melted butter. Pour the batter into the top right corner of the pan, then quickly swirl the pan in a circular “O” motion to evenly spread the batter.
  • Cook for about 1 minute until the edges start to lift. Flip and cook the other side for about 45 seconds until golden. Transfer to a wooden board to cool.
  • Repeat with the remaining batter, brushing the pan with butter as needed if the crepes begin to look matte or dry.

NOTES

  • No crepe pan? No problem! A non-stick skillet and a thin spatula work just as well.
  • This recipe yields approximately 15 crepes (10-inch size). The number of crepes may vary based on pan size.
  • To store, let crepes cool completely, then wrap tightly in plastic wrap to retain moisture. Best enjoyed the same day for optimal freshness and texture.
