COLLAGEN PROTEIN BALLS (PALEO, KETO)

These healthy Collagen Protein Balls feature a creamy almond butter and collagen filling, wrapped in a rich dark chocolate coating. Low-carb, Paleo, and Keto-friendly, these bite-sized treats make the perfect nutritious snack or dessert!

INGREDIENTS

Filling:

  • ½ cup drippy, unsweetened almond butter*
  • 1 Tbsp maple syrup
  • ½ tsp vanilla extract
  • ⅓ – ½ cup collagen peptides*
  • Pinch of salt (optional)

Coating:

  • ½ cup dark chocolate chips
  • ½ tsp coconut oil (optional)

INSTRUCTIONS

  • Prepare the Filling: In a medium bowl, combine almond butter, maple syrup, vanilla extract, and ⅓ cup collagen peptides. Mix with a spatula until smooth, adding more collagen if needed to achieve the right texture.
  • Shape & Freeze: Roll the mixture into bite-sized balls, about 1 tablespoon each (makes approximately 12 balls). Arrange them on a plate or small baking sheet and freeze for at least 15 minutes until firm.
  • Melt the Chocolate: In a small saucepan, melt dark chocolate chips with coconut oil over low heat, stirring frequently until smooth.
  • Coat the Bites: Remove the frozen balls from the freezer and dip each one into the melted chocolate, coating them completely. Place them on parchment paper. If desired, sprinkle with toppings like bee pollen before the chocolate sets.
  • Store & Enjoy: Keep in the fridge or freezer until ready to eat.

NOTES

The consistency may vary depending on the type of almond butter and collagen used. Start with ⅓ cup of collagen and gradually add more if needed. If the filling is too dry, add extra almond butter for a smoother texture.
