This coconut flour banana bread is absolutely amazing! It’s gluten-free, dairy-free, naturally sweetened with bananas, and comes together easily in just one bowl with 10 simple ingredients.
INGREDIENTS
- 1 cup mashed banana*
- 3 eggs
- ½ cup almond butter
- ¼ cup melted coconut oil
- 1 teaspoon vanilla extract
- ½ cup (60 grams) coconut flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon sea salt
- ½ cup dairy-free mini chocolate chips
INSTRUCTIONS
- Preheat the oven to 350°F (175°C).
- Prepare a loaf pan by greasing it with coconut oil or lining it with parchment paper.
- In a large mixing bowl, combine the mashed bananas, eggs, almond butter, melted coconut oil, and vanilla extract. Mix well.
- Add the dry ingredients (coconut flour, baking powder, baking soda, and sea salt) to the bowl. Stir until just combined, then gently fold in the chocolate chips.
- Pour the batter into the prepared loaf pan, spreading it evenly.
- Bake for 45 minutes, or until the bread turns golden brown and a toothpick inserted in the center comes out clean.
- Remove the loaf from the oven and let it cool in the pan on a wire rack for 20-30 minutes. Once cooled, remove the bread from the pan. If the pan was properly greased or lined, it should release easily.
- Slice the bread using a bread knife, serve, and enjoy!
NOTES
- Mashed Bananas: You’ll need 2-3 bananas to make 1 cup, depending on their size.
