INGREDIENTS
- 3 tbsp oil* (divided)
- 1 lb ground chicken (dark meat)
- 3 tbsp soy sauce (divided)
- 2 eggs, beaten
- ½ cup chopped carrot
- ½ cup chopped yellow onion
- ½ cup frozen peas, thawed
- 3 scallions, sliced
- 2 cloves garlic, minced (about 1 tbsp)
- 3 to 4 cups cauliflower rice
- 1 tbsp sesame oil

INSTRUCTIONS
- Cook the Chicken:
- Heat a nonstick skillet or wok over medium-high heat and add 1 tbsp oil.
- Add the ground chicken, breaking it up into small pieces with a spatula. Cook for about 5 minutes until fully cooked and no pink remains.
- Stir in 1 tbsp soy sauce, mix well, then transfer the chicken to a separate bowl.
- Prepare the Eggs:
