Try this quick and easy Korean-inspired Spicy Gochujang Noodle Soup! Ready in just 10 minutes, it’s packed with savory, aromatic flavors that will warm you up from the inside out.
Ingredients
Soup
- 1 clove garlic (crushed/minced/grated)
- 1 stalk green onion (diced/minced, white and green parts separated)
- 1 tbsp gochujang
- 1 tsp sugar
- 2 tbsp oyster sauce
- 1/2 tbsp light soy sauce
- 1/2 tbsp rice vinegar
- 1.5 cups chicken, beef, or vegetable broth
Other Ingredients
- 1 serving noodles
- 1 hard-boiled or jammy egg
- Sesame seeds
- Chili oil
Instructions
- Boil noodles until cooked, then drain and set aside.
- In a bowl, combine garlic, green onions, and sugar. Heat neutral oil in a pot over high heat for 1-2 minutes until smoking, then pour the hot oil over the garlic, green onions, and sugar.
- Add gochujang, oyster sauce, light soy sauce, and rice vinegar. Mix well, then pour in the hot broth. Stir everything together.
- Add the cooked noodles and your choice of toppings, such as the egg, sesame seeds, extra green onions, and a drizzle of chili oil. Serve hot and enjoy!
Notes
- Adjust seasonings to taste.
- Alternatively, cook this on the stovetop by sautéing the garlic, green onions, and sugar in a little oil for 30-60 seconds over medium heat. Add the sauces, stir, then pour in the broth.
- For a mason jar noodle soup lunch, prepare the spicy garlic mixture, then add the other ingredients (including cooked noodles) and keep the broth separate. When ready to eat, pour in the hot broth and shake/stir.
