- 3 tbsp fresh cilantro, chopped
- 1 can green chiles
Southwestern Sauce
- ¾ cup avocado oil mayo
- 2 tbsp plain Greek yogurt
- 3 tbsp mild salsa
- 1 lime, juiced
- ½ lime, zested
- 2 garlic cloves, minced
- 4 tsp taco seasoning
- 1 tsp hot sauce
- ½ tsp sea salt

INSTRUCTIONS
- Prepare the Sauce: In a bowl, mix together the mayo, Greek yogurt, salsa, lime juice, lime zest, minced garlic, taco seasoning, hot sauce, and sea salt. Set aside.
- Cook the Pasta: Follow package instructions to cook the pasta. Drain and let it cool.
- Assemble the Salad: In a large bowl, combine the cooked pasta, black beans, tomatoes, pickled onions, green chiles, roasted corn, and cilantro.
