SLOW COOKER GREEK LAMB

This easy slow cooker Greek lamb is incredibly tender, melting in your mouth with every bite! Perfect for gyros, a low-carb gyro salad, or enjoyed on its own with a dollop of tzatziki. With only 0.7g net carbs per serving, it’s a delicious and satisfying low-carb meal.

INGREDIENTS

  • 4 lbs boneless lamb roast
  • 2 tsp salt
  • ½ tsp pepper
  • 1 tsp oregano
  • ½ tsp thyme
  • ½ tsp marjoram
  • 5 cloves garlic, sliced into slivers

INSTRUCTIONS

  • Using a sharp knife, make small cuts all over the lamb roast and insert the garlic slivers.
  • Combine the salt, pepper, oregano, thyme, and marjoram, then rub the spice mixture evenly over the lamb.
  • Place the lamb in a slow cooker and cook on low for 6-8 hours, until tender.
  • Halfway through cooking, remove as much liquid as possible and set it aside. This helps the roast develop a flavorful crust and prevents excess moisture. Use the reserved liquid later to keep the meat juicy or make a gravy.
