Crockpot Chicken with Sour Cream and Bacon – Chicken breasts wrapped in bacon and slow-cooked in a creamy blend of sour cream, cream of chicken soup, and Cheddar Cheese soup. This simple, budget-friendly dish comes together with just a few affordable ingredients for a deliciously easy meal.

INGREDIENTS

  • 8 slices of bacon
  • 1/3 cup diced onion
  • 4 boneless, skinless chicken breasts
  • 1 (10-ounce) can cream of chicken soup
  • 1 (10-ounce) can Cheddar Cheese Soup
  • 1 cup sour cream
  • 1/3 cup flour
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

INSTRUCTIONS

  • Cut each chicken breast in half to create long, tender-like pieces.
  • In a large skillet, cook bacon over medium heat until it’s halfway done, allowing some fat to render, but leaving the bacon pliable.
  • While the bacon is still pliable, wrap one slice around each chicken piece and place them in the crockpot.
  • In the same skillet, add diced onion to the bacon fat and cook for 2 minutes. Remove with a slotted spoon and add to the crockpot.
  • In a medium bowl, whisk together both soups, sour cream, flour, and garlic powder. Pour the mixture over the chicken.
  • Cover the crockpot and cook on low for 5-6 hours, or until the chicken is fully cooked.
  • Once the chicken is done, remove it from the crockpot and place it on a serving platter. Whisk the sauce to combine, then taste and adjust seasoning with salt and pepper.
  • Serve over rice, egg noodles, or mashed potatoes.
