  • 12 slices ciabatta (about 1.5 cm thick)

INSTRUCTIONS

Step 1: Cook the Steak

  • Season the beef fillet with salt and pepper. Heat olive oil in an ovenproof pan, add butter, and sear the steak.
  • Add the garlic and thyme to the pan. Tilt the pan slightly and use a spoon to baste the steak with the infused oil.
  • Cook for a few minutes on the stovetop, then transfer the pan to the oven and roast at 8–10 minutes until desired doneness.

Step 2: Make the Tomato Relish

  • Heat olive oil in a saucepan and add the chopped onion and chilies. Sauté until soft.
  • Stir in the chopped tomatoes, salt, and pepper. Use a spatula to gently mash the tomatoes, cooking until the mixture becomes smooth and creamy (10–15 minutes).
