This Tuna Pasta Salad is creamy, delicious, and incredibly easy to prepare in just 20 minutes. Using simple ingredients, it’s the perfect side dish to complement any main meal.
INGREDIENTS
- 1 lb box of Rotini or Penne pasta
- 12 oz tuna (3 cans of 4 oz each)
- 5 tablespoons mayonnaise
- 1/2 cup green bell pepper, chopped
- 1/2 cup red bell pepper, chopped
- 1 small red onion, chopped
- 3/4 cup corn
- 1/2 teaspoon salt
- 2 teaspoons vinegar
- 1 tablespoon green onion, thinly chopped, for garnish
INSTRUCTIONS
- Cook the pasta according to the package instructions. Drain and set aside to cool.
- In a large bowl, combine the pasta with the remaining ingredients and mix well.
- Garnish with green onion and serve.
NOTES
- Be careful not to overcook or undercook the pasta. It should be al dente when drained.
- Allow the pasta to cool before mixing with mayonnaise. Adding mayo to hot pasta can cause it to separate and become oily.
- Full-fat mayonnaise provides the best flavor, but you can use reduced-fat mayo to reduce calories.
