CORNBREAD (EGG-FREE/VEGAN)

Craving a delicious cornbread but don’t have eggs on hand? This recipe is the perfect solution! It’s just as tasty as the traditional version.

Ingredients

  • 1 cup cornmeal
  • 1 ¼ cups flour
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ¼ cups rice milk or soy milk
  • ½ cup olive oil or vegetable oil
  • 2 tablespoons white vinegar
  • 1 tablespoon corn syrup

Directions

  • Preheat your oven to 375°F. Grease an 8″ or 9″ square baking pan.
  • In a mixing bowl, combine the dry ingredients: cornmeal, flour, sugar, baking powder, baking soda, and salt.
  • Stir in the wet ingredients: rice milk (or soy milk), oil, vinegar, and corn syrup. Mix until fully combined.
  • Pour the batter into the prepared pan and spread it evenly.
  • Bake for about 20 minutes, or until the sides start to pull away from the edges of the pan and a wooden toothpick inserted into the center comes out clean.
