INGREDIENTS
- 2 teaspoons maple syrup
- 1½ teaspoons olive oil (see note)
- 1/4 teaspoon + 1/8 teaspoon ground cinnamon, divided
- 1/8 teaspoon fine sea salt
- 1 cup raw shelled walnuts
- 1/2 teaspoon organic granulated sugar

INSTRUCTIONS
- Preheat your toaster oven to 325°F with the rack in the lowest position. If using a traditional oven, place the rack in the middle.
- Lightly coat a small rimmed baking sheet with cooking spray and set aside.
- In a large bowl, whisk together the maple syrup, olive oil, 1/4 teaspoon cinnamon, and sea salt. Add the walnuts and stir until evenly coated.
- Spread the walnuts in a single layer on the prepared baking sheet.
- Bake for 13 to 17 minutes, stirring occasionally, until the nuts are golden and fragrant.
- Meanwhile, mix the granulated sugar with the remaining 1/8 teaspoon cinnamon.
- Once the walnuts are done, remove them from the oven and immediately sprinkle with the cinnamon-sugar mixture. Let sit for 30 seconds, then stir and spread them back into a single layer.
- Allow the nuts to cool completely on the pan for about 30 minutes—they will continue to crisp up as they cool.
- Store any leftovers in an airtight container.
