TOAD IN THE HOLE FOR TWO – TRADITIONAL BRITISH FOOD

INGREDIENTS

Batter

  • 3 large eggs
  • 75 g plain flour
  • 150 ml milk or a mixture of milk and ale (ratio 2:1 or 1:1)
  • Salt and pepper to taste

Toad in the Hole

  • 400 g sausages (4–6, depending on size)
  • 1 tbsp dripping, duck fat, or oil
  • 1 portion of prepared batter

INSTRUCTIONS

Batter Preparation

  • Season the flour with salt and pepper, then sift it into a medium mixing bowl.
  • Create a well in the center of the flour and crack one egg into it.
  • Using a balloon whisk, beat the egg, gradually drawing in the flour.
  • Add the remaining eggs one at a time, whisking until all the flour is fully incorporated into a thick paste.
  • Slowly whisk in the milk or milk and ale mixture until smooth.
  • Cover the batter and refrigerate for at least 30 minutes, ideally 2–24 hours.

Toad in the Hole

  • Preheat the oven to 180°C (170°C for fan ovens).
  • Heat the fat in an oven-safe pan. Add the sausages, pricking them all over, and bake for 15 minutes, turning occasionally.
  • Increase the oven temperature to 230°C (220°C for fan ovens).
  • Remove the sausages and set them aside. Place the pan back in the oven, heating the fat until it begins to smoke lightly.
  • Pour the batter into the hot pan and quickly arrange the sausages in the batter.
  • Place the dish back in the oven and avoid opening the door for at least 15 minutes.
  • After 15 minutes, check the dish (preferably through the oven window) to ensure the batter is puffed up and turning golden.
  • Bake for a total of 25 minutes or until the batter is golden and crispy.
  • Serve immediately with onion gravy and a side of green vegetables.
